A morning person, that’s what I am. At least… that’s what I thought. Here in Puerto Lopez, it is not the case… Life is different here. People start their day early. And the dogs and roosters start even earlier! You thought roosters start at sunrise? I can tell you that is Not True. It’s all night. Really! And then there we have the dogs. They don’t live in the house, not even behind the gates… They are on the streets, even if they are not street dogs, because that’s where they live. Gathering around, preferably at 4 o’clock in the morning. One starts to bark, the others respond and before you know the whole pack is barking and running around in our ‘barrio’. Partytime!

People start their days around sunrise, which is about 6.00/6.30 am. There will always be a neighbour who turnes on the volume of the radio. They prefer Reggaeton. If I am lucky it’s the Marco Antonio Solis cd… I can listen to his voice all day. But not today. Today there is a meeting in the barrio. Before 7 am. A woman with a microphone, asking people to register for something, or donate money… I have no idea what it is all about. I don’t want to know either. But I can hear her loud and clear, while I am still in my bed. So, I get up, early… again…. Even for a morning person it’s an early day.

By the time it’s our coffee break I need something to eat. Breakfast seems so long ago. On mornings like this, these oatmeal cookies are the best. They are from a new cookbook, my former boss made. Filled with recipes for nice and healthy food to take to work. So for ‘one of those days’, make them (freeze them to store them for the next weeks, if needed) and take them to work. And take one extra, for your colleague.  You know… babies, neighbours, dogs… she/he might need one too! Just to get through those long days…

Oatmeal Cookies by Mascha

Ingredients
( 12 big ones)

120 gr flour
130 gr oatmeal
1 tbsp bakingpowder
1 tbsp all spice/cinnamon
salt
100 gr brown sugar
75 gr raisins
50 gr sesameseeds
2 tbsp honey
85 gr butter, melted
2 eggs

Instructions

  • Preheat the oven to 190 °C.
  • Prepare a baking sheet with a cookie sheet or baking paper.
  • In a bowl mix the flour, oatmeal, bakingpowder, spices and a pinch of salt.
  • Add the sugar, raisins and the sesameseeds. Mix well.
  • Add the honey, melted butter and both eggs and mix until you have some kind of a sticky dough.
  • Divide the dough in 12 pieces, shape them round and place them on the baking sheet.
  • Flatten them a little and space them a little apart, because they will rise a little and flatten out during baking.
  • Bake the oatmeal cookies in 15 minutes until the edges start to brown. They will be still soft but don’t bake them too long. They will get a little crispier once the’ve cooled, but still chewy in the middle.
  • Keep the oatmeal cookies for a few days in a sealed container or you can freeze them.
