Oreo koekjes zelf maken, patesserie

At the moment we are baking a lot of cakes and tarts. We try to set up a business and although we haven’t got our own shop yet, we decided we can already start selling cakes from our home. People can order directly what kind of pastry they want and we deliver it to their homes the next day. So it is not a lot of baking for ourselves right now. We have to buy cookies to have something with our coffee and tea. I don’t like that. Maybe it’s because I am a baker, maybe because the range of cookies in the shops are a little boring or expensive (in my opinion).  Especially the Oreo ones, which are a favourite.

So I decided, why not make homemade oreo cookies? On Pinterest are a lot of recipes for that. Although these ones are a little different and I don’t have a nice cookiestamp to make them look real, we quite liked them! They are nice chocolate sugar-cookies filled with a sugar paste. For that sugar paste filling are many different recipes, but they had one thing in common. It looked all very close to a  fondant/sugarpaste recipe. So I decided to cheat. I still had some leftover homemade marshmallow fondant in the freezer and used that as a filling. It was brilliant, worked perfect and is much easier!

If this is the real Oreo deal? I don’t know. These cookies are more like normal sugar cookies, but the taste is actually beautiful. I slowly get a hand on baking cookies and this is absolutely a recipe to keep and make more often. With or without the fondant filling!

Recipe: Homemade Oreo cookies

Ingredients

75 gr cacao
100 gr flour
1/4 tsp baking powder
pinch of salt
115 gr unsalted butter
150 gr sugar
55 gr brown caster sugar
1 eggyolk
1/2 eggwhite
1/2 tsp vanilla
1/4 tsp instant coffee, mixed with 1/4 tsp water
80-100 gr white fondant

Instructions

  • Sift the cacao, flour, bakingpowder and salt into a bowl.
  • In another bowl cream the butter with both types of sugar until fluffy
  • Add the egg, vanilla and coffee extract and mix it well.
  • Add the dry ingredients and form a nice ball of dough
  • Wrap it in plastic foil and leave it to rest for at least 1 hour in the fridge
  • Get the dough out of the fridge and roll it out.
  • Cut the cookies out with a cookie cutter or use a small glass. I used an eggcup for the perfect size. With that size you get about 40 cookies from this recipe (20 ore’s)
  • Put them on a cookie sheet lined with greaseproof paper or your silicon baking mat. Leave them to rest for 20 minutes more in the fridge.
  • Preheat the oven to 165C
  • Bake the cookies in 20-25 minutes until set. Don’t let the side get some color, they tend to get a little bitter that way.
  • Let them cool a little before putting them on a wire rack to cool completely
  • Divide your fondant into 20 small pieces, roll them into little balls and press them to flatten.
  • With a little milk or water you can paste the fondant between two cookies.
  • In an airtight container you can store these homemade oreo cookies for a few days.
